Spicy Penne


3 - 4 TBSPS. Olive Oil
4 Cloves Garlic - minced
1/2 (1/4 if not wanting it to spicy or omitt this all together to make it non spicy) Red Pepper Flakes
1 - 28oz. Can Italian Tomatoes (Pureed)
1 TSP. Salt
1/2 Freshly Ground Pepper (or just regular table pepper)
1/2 cup fresh parsley - chopped
1/2 cup Freshly grated parmesan cheese
1 LB. Whole Wheat Penne Noodles

Optional: Grilled Chicken Breast

In a large frying pan, heat oil then add garlic and pepper flakes. Do Not Brown. (We did and had to restart it!) Stir in tomatoes, salt and pepper. Cook for 10 - 15 mintues or until thickened. Stir in half of the parsley. Set Aside. In a large pot of boiling, salted water, cook Penne as directed on bag/box. Drain well. Put in serving bowl and reheat sauce and pour over penne. Sprinkle with parmesan and remaining parsley. Toss Well. Add cut up chicken breast if you like.

So Yummmmmmmmmy. The flavours in this are unbelievable!

The hubby and I have been doing some cooking lately and thought what a great idea to start a blog for none other then, Yummy Recipes. Being a stay at home mom I am always looking for great stuff to cook and we love to cook together so we are going to start posting recipes we have cooked and invite anyone to send something they love to cook ( could I say cook anymore?). I would love to compile a ton of recipes onto one page...easy to cook ones of course! So hope you enjoy them! And again feel free to send us some of your recipes!
